Tips for measuring butter accurately

Use the wrapper markings with care. US sticks have tablespoon markings printed on the wrapper, but the wrapper is often misaligned around the butter by a half-tablespoon or more. For anything sensitive — laminated doughs, shortbread, buttercream — weigh it.

Don't measure melted butter in stick equivalents. A "stick, melted" means melt one 113 g stick, not fill a half-cup measure with melted butter — air pockets and clinging solids make volume measurements of melted butter unreliable.
